Description

An incredibly easy and addictive appetizer featuring a tangy dill pickle and cheesy blend, baked until golden and perfectly crispy.


Ingredients

2 cups shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1 cup finely chopped dill pickles, well-drained
1/2 teaspoon garlic powder
2 tablespoons all-purpose flour
1/4 cup Panko breadcrumbs (optional, for extra crispiness)
Optional: Ranch dressing or sriracha mayo for serving


Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2: In a spacious bowl, combine the shredded sharp cheddar cheese, shredded mozzarella cheese, finely chopped and thoroughly drained dill pickles, garlic powder, and all-purpose flour. If you're using Panko breadcrumbs for extra crisp, add them now. Mix all ingredients thoroughly until well combined.
Step 3: Take small portions of the mixture and form them into uniform, bite-sized balls or flattened discs, roughly 1-inch in diameter.
Step 4: Arrange the formed cheese bites on your prepared baking sheet. Ensure there is adequate space between each bite to allow for even cooking and optimal crisping.
Step 5: Bake for 12-15 minutes, or until the cheese bites are golden brown and deliciously crispy around the edges. Keep an eye on them to prevent overbrowning.
Step 6: Carefully remove the baking sheet from the oven. Let the Crispy Dill Pickle Cheese Bites cool for a few minutes before serving warm. They are fantastic on their own or with your favorite dipping sauce like ranch or sriracha mayo.

Notes

For an even tangier kick, you can add a tiny splash of pickle juice (about 1 teaspoon) to the mixture, but be careful not to add too much moisture. These bites are best served fresh, but leftovers can be reheated in a toaster oven for regained crispness.
