Description
A juicy, tender chicken breast coated in a golden-brown, crunchy parmesan and panko crust. This easy one-pan meal is baked to perfection in under 30 minutes.
Ingredients
4 boneless, skinless chicken breasts
1 cup Panko breadcrumbs
1/2 cup freshly grated Parmesan cheese
1/3 cup mayonnaise or plain Greek yogurt
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp dried oregano
Salt and black pepper to taste

Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or place a wire rack over it.
Step 2: In a shallow bowl, combine the Panko breadcrumbs, grated Parmesan cheese, garlic powder, smoked paprika, oregano, salt, and pepper. Mix well to ensure the spices are evenly distributed.
Step 3: Pat the chicken breasts dry with paper towels. Using a brush or a spoon, coat each chicken breast thoroughly with a thin layer of mayonnaise or Greek yogurt.
Step 4: Press each coated chicken breast into the Panko mixture, turning to coat all sides evenly. Press firmly so the crumbs adhere well to the chicken.
Step 5: Place the breaded chicken on the prepared baking sheet. Lightly spray the tops with cooking spray to help achieve a golden color.
Step 6: Bake for 22-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the crust is golden brown and crispy.
Step 7: Remove from the oven and let the chicken rest for 5 minutes before slicing and serving.
Notes
To ensure the bottom stays crispy, use a wire cooling rack on top of your baking sheet. This allows the heat to reach all sides of the chicken.
