A comforting and easy slow cooker meal featuring tender ground beef, hearty potatoes, sautéed peppers and onions, all smothered in a rich, savory sauce and topped with melty cheese.
Ingredients
1.5 lbs ground beef (80/20 lean)
1 tbsp olive oil
1 large onion, thinly sliced
2 bell peppers (any color), thinly sliced
2 cloves garlic, minced
1.5 lbs Yukon Gold potatoes, peeled and diced into 1-inch cubes
1 cup beef broth
1/4 cup Worcestershire sauce
1 tsp dried Italian seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and black pepper to taste
1.5 cups shredded provolone cheese
1/2 cup shredded sharp cheddar cheese (optional)
Fresh parsley, chopped (for garnish)
Instructions
Step 1: In a large skillet, brown the ground beef over medium-high heat. Drain any excess grease thoroughly and transfer the beef to the slow cooker.
Step 2: Add the olive oil to the same skillet (if needed), then add the thinly sliced onion and bell peppers. Sauté over medium heat until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant. Transfer the sautéed vegetables to the slow cooker with the beef.
Step 3: Add the diced potatoes to the slow cooker, distributing them evenly over the beef and vegetables.
Step 4: Pour in the beef broth and Worcestershire sauce. Season generously with Italian seasoning, garlic powder, onion powder, salt, and black pepper. Stir everything gently to combine, ensuring the potatoes are mostly submerged in the liquid.
Step 5: Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the potatoes are completely tender.
Step 6: During the last 30-45 minutes of cooking, sprinkle the shredded provolone and cheddar cheeses evenly over the top of the casserole. Re-cover and continue cooking until the cheese is completely melted and bubbly.
Step 7: Garnish with fresh chopped parsley before serving hot.
Step 8: Serve directly from the slow cooker and enjoy your hearty meal!
Notes
For a spicier kick, add a pinch of red pepper flakes with your seasonings or a few dashes of hot sauce before serving. You can also substitute thinly sliced sirloin or ribeye for ground beef, just sear it quickly before adding to the slow cooker.
