Description
A comforting, easy-to-make slow cooker meal featuring tender chicken thighs, creamy Yukon gold potatoes, and a rich garlic parmesan glaze.
Ingredients
2 lbs boneless skinless chicken thighs
1.5 lbs Yukon Gold potatoes, cubed
1/4 cup unsalted butter, melted
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
Fresh parsley for garnish
Instructions
Step 1: Grease the inside of your slow cooker with non-stick spray or a small amount of oil.
Step 2: Place the cubed Yukon Gold potatoes in an even layer at the bottom of the crockpot.
Step 3: Lay the chicken thighs on top of the potatoes.
Step 4: In a small bowl, whisk together the melted butter, minced garlic, dried oregano, salt, pepper, and 1/4 cup of the Parmesan cheese.
Step 5: Pour the butter mixture over the chicken and potatoes, using a brush or spoon to ensure everything is well-coated.
Step 6: Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and potatoes are soft.
Step 7: Sprinkle the remaining Parmesan cheese over the top 30 minutes before serving.
Step 8: Garnish with fresh parsley and serve warm.
Notes
For a crispy finish, you can transfer the chicken and potatoes to a baking sheet and broil for 3-5 minutes before serving.
