An incredibly easy and flavorful slow cooker recipe for tender beef bites and potatoes coated in a rich garlic butter sauce, perfect for a comforting family meal.
Ingredients
2.5 lbs boneless beef chuck roast, cut into 1-inch cubes
1.5 lbs baby potatoes, halved or quartered
1 cup beef broth
1/2 cup unsalted butter, melted
6 cloves garlic, minced
1 tablespoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Step 1: Lightly spray the inside of your slow cooker with non-stick spray.
Step 2: In a small bowl, whisk together the melted butter and minced garlic.
Step 3: Place the cubed beef chuck roast and halved/quartered potatoes into the prepared slow cooker.
Step 4: Pour the beef broth over the beef and potatoes. Sprinkle evenly with Italian seasoning, salt, and black pepper.
Step 5: Drizzle the garlic butter mixture over everything in the slow cooker, ensuring everything is well coated.
Step 6: Cover and cook on low for 4-6 hours, or on high for 2.5-3.5 hours, until the beef is incredibly tender and the potatoes are soft.
Step 7: Once cooked, stir gently. Garnish with fresh chopped parsley before serving.
Notes
For an extra layer of flavor, you can sear the beef cubes in a hot pan with a tablespoon of oil for 2-3 minutes per side before adding them to the slow cooker.
