An incredibly easy and flavorful recipe for tender shredded chicken, perfect for building delicious tacos effortlessly in your slow cooker.
Ingredients
12 oz. (about 1 1/2 cups) salsa
1 packet taco seasoning (1 oz / 28g)
1 lb. boneless skinless chicken breast
Kosher salt, to taste
Fresh cracked pepper, to taste
Flour tortillas, for serving
1/4 cup diced red onion, for serving
1/4 cup fresh chopped cilantro, for serving
1/4 cup Cotija cheese, crumbled, for serving
Instructions
Step 1: Combine salsa, taco seasoning, and a few large pinches of salt and pepper in a crockpot insert. Stir well to combine.
Step 2: Nestle the boneless, skinless chicken breast into the salsa mixture, ensuring it's mostly submerged.
Step 3: Cover the crockpot and cook on high for 2 hours or on low for 4 hours, or until the chicken is cooked through and easily shreds with a fork.
Step 4: Using two forks, shred the cooked chicken directly in the crockpot with the salsa mixture. Stir the shredded chicken into the sauce to coat evenly.
Step 5: Serve the warm shredded chicken mixture inside flour tortillas, topped with diced red onion, fresh chopped cilantro, and a sprinkle of Cotija cheese. Enjoy immediately!
Notes
For an extra layer of flavor, you can quickly sear the chicken breasts in a hot pan for 2-3 minutes per side before adding them to the crockpot. This step is optional but adds a nice depth. Adjust the spice level by selecting a mild, medium, or hot salsa.
