Description
A savory, high-protein keto breakfast waffle made with egg, mozzarella, and diced ham.
Ingredients
1 large egg
1/2 cup shredded mozzarella cheese (divided)
2 tbsp finely diced cooked ham
1/4 tsp garlic powder
1/8 tsp black pepper
Instructions
Step 1: Preheat your mini waffle iron until it is fully hot.
Step 2: In a small bowl, whisk together the egg, garlic powder, and black pepper.
Step 3: Sprinkle a small amount of mozzarella cheese (about 1 tbsp) onto the bottom of the waffle iron.
Step 4: Pour half of the egg mixture over the cheese, then add half of the diced ham and another sprinkle of cheese.
Step 5: Close the lid and cook for 3-4 minutes until the steam stops and the exterior is golden brown.
Step 6: Remove the chaffle and place on a wire rack to cool for 1 minute before serving; repeat for the second chaffle.
Notes
For maximum crunch, do not peek at the chaffle while it cooks. Let the steam fully dissipate.
