- ½ cup all-purpose flour
- 1½ cups granulated sugar
- ½ cup unsalted butter, melted
- 2 cups milk
- 4 large eggs
- 1 tsp vanilla extract
- 1½ cups sweetened shredded coconut
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch pie dish with butter or nonstick spray.
- In a large bowl, whisk together the flour, sugar, and salt.
- Add melted butter, milk, eggs, and vanilla. Whisk until fully combined.
- Stir in the shredded coconut.
- Pour mixture into prepared pie dish.
- Bake for 45–50 minutes, until top is golden and a knife inserted comes out clean.
- Cool completely before slicing.
Notes
Use room temperature eggs and milk for smooth blending. Don’t worry if the batter seems liquid; it firms as it cools.
