Description

A nostalgic, tropical dessert with a self-forming crust, creamy custard center, and a golden coconut-kissed top.


Ingredients

  • ½ cup all-purpose flour
  • 1½ cups granulated sugar
  • ½ cup unsalted butter, melted
  • 2 cups milk
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1½ cups sweetened shredded coconut
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish with butter or nonstick spray.
  2. In a large bowl, whisk together the flour, sugar, and salt.
  3. Add melted butter, milk, eggs, and vanilla. Whisk until fully combined.
  4. Stir in the shredded coconut.
  5. Pour mixture into prepared pie dish.
  6. Bake for 45–50 minutes, until top is golden and a knife inserted comes out clean.
  7. Cool completely before slicing.

Notes

Use room temperature eggs and milk for smooth blending. Don’t worry if the batter seems liquid; it firms as it cools.
