Description

A crisp and cool twist on the classic Caesar salad using sliced English cucumbers and a creamy homemade dressing.


Ingredients

2 large English cucumbers, sliced
1/2 cup freshly shaved Parmesan cheese
1/2 cup Caesar croutons
1/2 cup high-quality mayonnaise
2 garlic cloves, minced
1 tsp anchovy paste
1 tbsp fresh lemon juice
1 tsp Dijon mustard
1/4 cup extra virgin olive oil
Fresh cracked black pepper to taste


Instructions

Step 1: Slice the cucumbers into 1/4 inch rounds and place them in a large mixing bowl.
Step 2: In a small jar or bowl, combine mayonnaise, garlic, anchovy paste, lemon juice, and Dijon mustard. Whisk until smooth.
Step 3: Slowly whisk in the olive oil until the dressing is fully emulsified and thick.
Step 4: Pour the dressing over the cucumbers and toss thoroughly to coat each slice.
Step 5: Fold in half of the Parmesan cheese and the black pepper.
Step 6: Top with croutons and the remaining Parmesan cheese just before serving to maintain crunch.

Notes

For the best results, use English cucumbers to avoid tough skin and large seeds.
