A refreshing twist on the classic Italian Caprese salad, featuring crisp cucumbers, juicy tomatoes, fresh mozzarella, aromatic basil, and a sweet balsamic glaze.
Ingredients
2 large English or Persian cucumbers, sliced
2 cups cherry or grape tomatoes, halved
8 oz fresh mozzarella balls (bocconcini or pearls), drained
1/2 cup fresh basil leaves, gently torn
1/4 cup balsamic glaze
2 tbsp extra virgin olive oil
Salt to taste
Freshly ground black pepper to taste
Instructions
Step 1: Wash your cucumbers and slice them into thin rounds or half-moons, about ¼-inch thick. Place them in a large mixing bowl.
Step 2: Wash and halve your cherry or grape tomatoes. Add them to the bowl with the cucumbers.
Step 3: Drain the fresh mozzarella balls and add them to the bowl with the tomatoes and cucumbers.
Step 4: Gently tear the fresh basil leaves into smaller pieces and sprinkle them over the other ingredients in the bowl.
Step 5: In a separate small bowl, whisk together the balsamic glaze and olive oil until well combined.
Step 6: Drizzle the dressing evenly over the salad ingredients. Gently toss everything together until all components are lightly coated.
Step 7: Season generously with salt and freshly ground black pepper according to your taste. Serve immediately and enjoy the fresh flavors.
Notes
For an extra burst of flavor, you can lightly toast the mozzarella balls before adding them, or add a sprinkle of toasted pine nuts for crunch. Always use fresh, high-quality ingredients for the best results.
