2 English cucumbers, diced
4 ripe Roma tomatoes, diced

1/2 teaspoon dried basil

Instructions
Step 1: Prepare your vegetables. Dice the English cucumbers and Roma tomatoes into similar-sized pieces. Thinly slice the red onion and finely chop the fresh parsley.
Step 2: In a small bowl, prepare the dressing. Whisk together the extra virgin olive oil, red wine vinegar, granulated sugar, dried basil, salt, and freshly ground black pepper until well combined.
Step 3: In a large mixing bowl, combine the diced cucumbers, diced tomatoes, sliced red onion, and chopped fresh parsley.
