  • 1 cup heavy cream
  • 1/2 cup granulated sugar (for custard)
  • 2 egg yolks
  • 1 tsp vanilla extract (for custard)
  • 1/4 cup chopped nuts (such as almonds or walnuts)
  • 1/4 cup granola
  • Fresh berries (optional)
  • Powdered sugar (optional)

Instructions

  1. Prepare the Custard Cream: Heat heavy cream in a saucepan over medium heat until it begins to simmer.
  2. Whisk granulated sugar and egg yolks in a bowl until smooth. Gradually add hot cream to egg mixture, whisking constantly.
  3. Return mixture to saucepan and cook over low heat, stirring constantly, until custard thickens.
  4. Remove from heat, stir in vanilla extract, and let custard cool to room temperature.
  5. Prepare the Buns: Combine all-purpose flour, granulated sugar, baking powder, and salt in a bowl. Mix well.
  6. In another bowl, whisk softened butter, eggs, milk, vanilla extract, and shredded coconut. Add wet ingredients to dry ingredients and mix until just combined.
  7. Spoon batter into greased muffin tin and bake at 350°F (175°C) for 20-25 minutes or until a toothpick inserted in center comes out clean.
  8. Once buns are cooled, cut in half and spread custard cream on bottom half. Replace top half.
  9. Garnish with chopped nuts, granola, fresh berries, and powdered sugar if desired. Serve immediately and enjoy!
