Description
A rich, velvety date syrup recipe simple homemade silan made with just two ingredients. This natural sweetener is perfect for drizzling, baking, and glazing.
Ingredients
1 lb (450g) Medjool dates, pitted
4 cups filtered water
Optional: 1 pinch sea salt
Optional: 1 tsp lemon juice
Instructions
Step 1: Thoroughly wash the dates and ensure all pits and stems are removed.
Step 2: In a large heavy-bottomed pot, combine the pitted dates and the 4 cups of filtered water.
Step 3: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the pot.
Step 4: Simmer the dates for approximately 45-60 minutes, or until the dates are completely soft and the water has turned dark brown.
Step 5: Use a potato masher or the back of a large spoon to mash the dates into the water, creating a thick pulp.
Step 6: Place a fine-mesh strainer over a clean bowl and line it with cheesecloth or use a dedicated nut milk bag.
Step 7: Pour the date mixture into the strainer and allow the liquid to drip through. Once cool enough to handle, squeeze the cloth or bag firmly to extract every bit of liquid.
Step 8: Discard the solids (or save them for smoothies) and return the liquid to the pot.
Step 9: Simmer the liquid uncovered over medium-low heat for 20-30 minutes, stirring occasionally, until it reaches a syrupy consistency.
