A wonderfully moist and rich chocolate cake infused with the unmistakable flavor of Coca-Cola, topped with a luscious warm Coca-Cola chocolate frosting.
Ingredients
1/2 cup (1 stick) unsalted butter
1/2 cup vegetable oil
1 cup Coca-Cola (regular, not diet)
2 cups granulated sugar
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 cup buttermilk
2 large eggs
2 teaspoons vanilla extract
FOR THE FROSTING:
1/2 cup (1 stick) unsalted butter
1/2 cup unsweetened cocoa powder
1/2 cup Coca-Cola (regular, not diet)
2 cups powdered sugar
1/4 cup chocolate syrup
2 teaspoons vanilla extract
Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
Step 2: In a large saucepan, combine 1/2 cup butter, 1/2 cup oil, and 1 cup Coca-Cola. Bring to a boil over medium heat, then remove from heat.
Step 3: In a separate large bowl, whisk together 2 cups granulated sugar, 2 cups all-purpose flour, 3/4 cup cocoa powder, and 1 teaspoon baking soda. Gradually add the hot Coca-Cola mixture to the dry ingredients, whisking until smooth.
Step 4: In a small bowl, whisk together 1/2 cup buttermilk, 2 large eggs, and 2 teaspoons vanilla extract. Add this mixture to the chocolate batter and mix well until just combined. Do not overmix.
Step 5: Pour the batter into your prepared 9x13 inch baking pan. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
Step 6: While the cake is baking or immediately after it comes out of the oven, prepare the frosting. In a medium saucepan, melt 1/2 cup butter over medium heat. Stir in 1/2 cup cocoa powder and 1/2 cup Coca-Cola. Bring to a boil, then remove from heat.
Step 7: Whisk in 2 cups powdered sugar, 1/4 cup chocolate syrup, and 2 teaspoons vanilla extract until smooth. Immediately pour the warm frosting evenly over the warm cake. Let the cake cool completely before serving, allowing the frosting to soak in.
Notes
For best results, make sure your eggs and buttermilk are at room temperature. Don't overmix the batter once the dry ingredients are added. The warm frosting is key – pour it over the warm cake immediately after making it for that perfect seeped-in glaze.
