Description
An easy-to-follow New Orleans style King Cake featuring a rich brioche dough and a smooth cream cheese center.
Ingredients
2 1/4 tsp active dry yeast
1/2 cup warm water (110°F)
1/2 cup granulated sugar
4 cups all-purpose flour
1 tsp salt
1/2 cup warm milk
1/2 cup melted unsalted butter
2 large eggs
8 oz softened cream cheese
1/2 cup powdered sugar
2 tsp cinnamon
1 1/2 cups powdered sugar (for glaze)
2 tbsp milk
Purple, green, and gold sanding sugar
Instructions
Step 1: Proof the yeast in warm water with a pinch of sugar for 10 minutes until it becomes foamy.
Step 2: In a stand mixer, combine flour, remaining sugar, salt, warm milk, butter, and eggs with the yeast mixture.
Step 3: Knead the dough for 5 minutes until smooth, then let it rise in a warm place for 1 hour.
Step 4: Mix the softened cream cheese and 1/2 cup powdered sugar until smooth for the filling.
Step 5: Roll out the dough into a rectangle, spread the filling, sprinkle with cinnamon, and roll into a long log.
Step 6: Form the log into a ring on a baking sheet and let rise for another 45 minutes.
Step 7: Bake at 350°F for 25-30 minutes, then cool completely before adding the glaze and colored sugars.
Notes
Ensure the yeast is active; if it doesn't foam in Step 1, start over with fresh yeast.
