Ingredients
8 large flour tortillas or 16 spring roll wrappers
8 oz (226g) cream cheese, softened
1 cup cooked pulled pork, shredded
1/2 cup cooked bacon, crumbled
1 cup shredded sharp cheddar cheese
1/2 cup BBQ sauce, plus more for serving
4 cups vegetable oil or peanut oil, for deep frying
Water or cornstarch slurry (for sealing wrappers)
Instructions
Step 1: In a medium mixing bowl, combine the softened cream cheese, shredded pulled pork, crumbled bacon, shredded sharp cheddar cheese, and 1/2 cup of BBQ sauce. Mix thoroughly until all ingredients are well incorporated.
Step 2: If using flour tortillas, cut each large tortilla in half. Lay a tortilla half (or a spring roll wrapper) flat on a clean surface. Place about 2-3 tablespoons of the filling near one edge, forming a small log shape.
Step 3: Fold in the short sides of the wrapper over the filling, then tightly roll the wrapper from the bottom up. For flour tortillas, moisten the final edge with a little water to seal securely. For spring roll wrappers, use a cornstarch slurry to create a tight seal.
Step 4: In a deep pot or deep fryer, heat the vegetable or peanut oil to 350°F (175°C). Use a kitchen thermometer to monitor the temperature accurately.
Step 5: Carefully place 3-4 rolls into the hot oil, ensuring not to overcrowd the fryer. Fry for 3-4 minutes, or until the rolls are golden brown and crispy, turning them gently for even cooking.
Step 6: Using a slotted spoon or tongs, remove the fried rolls from the oil and transfer them to a wire rack lined with paper towels to drain any excess oil.
