Ingredients
2 ½ cups blanched almond flour
½ cup psyllium husk powder
2 teaspoons baking powder
½ teaspoon salt
3 large eggs
2 tablespoons apple cider vinegar
1 cup warm water
1 tablespoon sesame seeds (optional, for topping)
Instructions
Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Step 2: In a large bowl, whisk together the almond flour, psyllium husk powder, baking powder, and salt until well combined.
Step 3: In a separate medium bowl, whisk the eggs and apple cider vinegar.
Step 4: Pour the wet ingredients into the dry ingredients. Begin mixing with a spoon, then gradually add the warm water, mixing until a cohesive dough forms. It will be thick.
Step 5: Let the dough rest for 5-10 minutes. This allows the psyllium husk to absorb the liquid and thicken further.
Step 6: Divide the dough into 12 equal portions. With slightly damp hands, roll each portion into a smooth ball and place them on the prepared baking sheet.
Step 7: If desired, sprinkle the tops of the rolls with sesame seeds.
Step 8: Bake for 20-25 minutes, or until the rolls are golden brown and sound hollow when tapped. Baking time may vary depending on your oven.
