- 4 boneless, skinless chicken breasts
- 4 sheets aluminum foil (large enough to wrap each chicken breast)
- 4 tbsp olive oil (1 tbsp per packet)
- Salt and pepper to taste
- 1 cup teriyaki sauce
- 2 cloves garlic, minced
- 1 cup pineapple chunks (fresh or canned)
- 1 red bell pepper, sliced
- 1 small onion, sliced
- 2 tbsp sesame seeds (optional garnish)
- 2 tbsp chopped green onions (optional garnish)
Instructions
- Preheat grill to medium heat or oven to 400°F (200°C).
- Place each chicken breast on a separate sheet of foil.
- Drizzle each chicken breast with 1 tbsp olive oil; season with salt and pepper.
- In a bowl, mix teriyaki sauce, minced garlic, pineapple chunks, sliced red bell pepper, and sliced onion.
- Spoon the teriyaki mixture evenly over each chicken breast.
- Fold foil edges tightly to seal packets completely.
- If grilling, place packets over medium heat and cook 25-30 minutes, turning halfway through.
- If baking, place packets on a baking sheet and bake 25-30 minutes.
- Check that chicken reaches internal temperature of 165°F (75°C) and vegetables are tender.
- Carefully open packets to avoid steam; transfer contents to plates.
- Garnish with sesame seeds and chopped green onions if desired.
- Serve immediately, optionally with rice or salad.
Notes
Use fresh pineapple for best flavor. Double-wrap foil packets to prevent leaks. Customize vegetables as desired. Foil packets can be prepped ahead and refrigerated for up to two days before cooking.
