A moist and flavorful sweet potato quick bread topped with a zesty and spicy orange ginger glaze.
Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup vegetable oil
2 large eggs, room temperature
1.5 cups mashed cooked sweet potato (approx. 2 medium potatoes)
1 tablespoon freshly grated ginger
1 teaspoon vanilla extract
For the glaze: 1 cup powdered sugar
2 tablespoons fresh orange juice
1 teaspoon orange zest
1/2 teaspoon freshly grated ginger
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan thoroughly.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
Step 3: In a large bowl, beat the granulated sugar, brown sugar, and vegetable oil together until smooth.
Step 4: Add the eggs one at a time to the sugar mixture, beating well after each addition. Stir in the mashed sweet potato, fresh ginger, and vanilla extract.
Step 5: Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix the dense sweet potato loaf with orange ginger glaze batter.
Step 6: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Step 7: Bake for 55 to 65 minutes, or until a toothpick inserted into the center of the dense sweet potato loaf with orange ginger glaze comes out clean.
Step 8: Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack.
Step 9: While the loaf cools, whisk together the powdered sugar, orange juice, orange zest, and grated ginger in a small bowl to create the glaze.

Notes
Ensure the sweet potatoes are mashed very smooth for the best texture. You can roast the potatoes a day in advance to save time.
