Description

A vibrant and healing detox vegetable soup recipe packed with anti-inflammatory turmeric, ginger, and nutrient-dense greens to help you feel your best.


Ingredients

2 tablespoons avocado oil
1 large yellow onion, diced
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon fresh turmeric, grated (or 1 tsp ground)
3 large carrots, sliced
2 stalks celery, sliced
1 head of broccoli, cut into small florets
1 red bell pepper, chopped
1 can (14.5 oz) diced tomatoes
6 cups low-sodium vegetable broth
2 cups chopped kale or spinach
1 lemon, juiced
Salt and black pepper to taste
Fresh parsley for garnish


Instructions

Step 1: Heat the avocado oil in a large pot over medium heat. Add the onion, garlic, ginger, and turmeric. Sauté for about 5 minutes until the onion is translucent and fragrant.
Step 2: Stir in the carrots, celery, and bell pepper. Cook for another 5 minutes, allowing the vegetables to soften slightly.
Step 3: Add the broccoli florets and diced tomatoes (with their juices). Pour in the vegetable broth and stir well.
Step 4: Bring the detox vegetable soup recipe to a boil, then reduce the heat to low. Cover and simmer for 20 minutes until the vegetables are tender.
Step 5: Stir in the kale or spinach and cook for 2-3 minutes until wilted.
Step 6: Remove from heat. Stir in the fresh lemon juice and season with salt and black pepper.
Step 7: Serve hot, garnished with fresh parsley if desired.

Notes

You can add beans or lentils to this detox vegetable soup recipe for extra protein.
