Ingredients
1 pound ground chicken
1 teaspoon garlic powder
1 teaspoon paprika
2 tablespoons dry ranch seasoning powder
8 small flour tortillas
2 cups shredded sharp cheddar cheese
1 cup dill pickles, finely chopped
1/4 cup fresh dill, chopped
1/2 cup ranch dressing, for drizzling
Instructions
Step 1: Season the ground chicken with garlic powder, paprika, and 1 tablespoon of the ranch seasoning in a bowl.
Step 2: Roll the chicken into 8 equal-sized balls.
Step 3: Place one chicken ball in the center of a flour tortilla.
Step 4: Place the tortilla chicken-side down on a hot griddle and smash flat with a spatula.
Step 5: Cook for 3-4 minutes until meat is browned, then flip to toast the tortilla.
Step 6: Sprinkle a circle of cheddar cheese on the griddle and place the taco chicken-side down onto the cheese to create the crispy lace.
Step 7: Once the cheese is golden and lacy, fold and serve with pickles, extra dill, and ranch drizzle.
Notes
Ensure the griddle is hot before smashing to prevent sticking and ensure a good crust.
