Ingredients
1 lb ground chicken
1/2 cup dill pickles, finely minced
2 tablespoons dill pickle juice
1 packet dry ranch seasoning mix
2 cups shredded sharp cheddar cheese
8 small flour tortillas
1/2 cup fresh dill, chopped
1/4 cup ranch dressing for drizzling
Instructions
Step 1: Mix ground chicken with minced pickles, pickle juice, and ranch seasoning in a bowl.
Step 2: Roll the chicken mixture into 8 equal-sized balls.
Step 3: Place a chicken ball on a tortilla and press it down firmly.
Step 4: Place meat-side down on a hot griddle and smash with a spatula.
Step 5: Cook for 3-4 minutes until a crust forms, then flip.
Step 6: Sprinkle cheese around the taco edges and cook until crispy.
