Ingredients
4 cups cooked chicken, shredded or diced
1 (10.5 ounce) can cream of chicken soup
1 cup sour cream
2 cups shredded cheddar cheese, divided
1 (6 ounce) box dry stuffing mix (e.g., Stove Top)
Instructions
Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
Step 2: In a large bowl, combine the shredded cooked chicken, cream of chicken soup, sour cream, and 1.5 cups of the shredded cheddar cheese. Mix well until everything is evenly coated.
Step 3: Spread the chicken mixture evenly into the prepared baking dish.
Step 4: Sprinkle the remaining 0.5 cup of shredded cheddar cheese over the chicken mixture, then evenly top with the dry stuffing mix.
Step 5: Bake for 30 minutes, or until the casserole is bubbly around the edges and the stuffing topping is golden brown.
Step 6: Remove from oven and let stand for 5-10 minutes before serving.
Notes
For an extra layer of flavor, you can add a pinch of garlic powder or onion powder to the chicken mixture. Rotisserie chicken works perfectly for quick prep!
