Description
A creamy, floral, and perfectly sweet Earl Grey Milk Tea with chewy tapioca pearls.
Ingredients
2 tablespoons loose-leaf Earl Grey tea (or 4 tea bags)
1 cup boiling water
1/2 cup quick-cook tapioca pearls (boba)
1/4 cup brown sugar
1/4 cup water (for syrup)
1 cup whole milk or oat milk
2 cups ice cubes
Optional: Vanilla extract or lavender syrup
Instructions
Step 1: Brew the tea concentrate by steeping the Earl Grey tea in 1 cup of boiling water for 5 minutes. Strain and let it cool completely.
Step 2: In a small saucepan, combine brown sugar and 1/4 cup water. Simmer until the sugar dissolves and the mixture thickens slightly into a syrup.
Step 3: Cook the tapioca pearls according to the package instructions. Once tender, drain them and immediately place them into the warm brown sugar syrup.
Step 4: Let the pearls soak in the syrup for 10 minutes to absorb the sweetness.
Step 5: Divide the syrup-coated pearls between two tall glasses. Add ice cubes to each glass.
Step 6: Pour the cooled tea concentrate over the ice, followed by the milk of your choice. Stir well with a wide boba straw and enjoy!
Notes
For a stronger bergamot flavor, use a high-quality loose-leaf tea. You can also make the tea concentrate ahead of time and store it in the fridge.
