Description
An effortless, 4-ingredient cookie recipe that results in incredibly soft, chewy, and festive treats perfect for any Easter celebration.
Ingredients
1 box (15.25 oz) White or Vanilla Cake Mix
2 large eggs, room temperature
1/2 cup vegetable oil
1 cup pastel M&M candies
1/2 cup Easter themed sprinkles
Instructions
Step 1: Preheat your oven to 350°F and line two large baking sheets with parchment paper or silicone mats.
Step 2: In a large bowl, stir together the dry cake mix, eggs, and oil until a thick dough forms and no dry streaks remain.
Step 3: Gently fold in the Easter candies and sprinkles, reserving a tablespoon of each for topping the cookies later.
Step 4: Chill the dough in the refrigerator for 15-20 minutes to reduce stickiness and prevent excessive spreading.
Step 5: Using a cookie scoop, drop rounded tablespoons of dough onto the sheets, spaced 2 inches apart.
Step 6: Press a few extra candies into the top of each dough ball and bake for 9-11 minutes until the edges are just set.
Step 7: Allow the cookies to cool on the baking sheet for 5 minutes before moving them to a wire rack to finish cooling.
Notes
Ensure you do not overbake these cookies; they should look slightly underdone in the center when you pull them out of the oven to maintain their signature softness.
