Description
A soft, cake-like cookie with a rich cream cheese base and festive Easter sprinkles, finished with a powdered sugar crinkle.
Ingredients
1 box (15.25 oz) vanilla or yellow cake mix
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
1/2 cup powdered sugar (for rolling)
1/3 cup pastel Easter sprinkles
Instructions
Step 1: Beat the softened cream cheese and butter in a large bowl until smooth and creamy.
Step 2: Add the egg and vanilla extract, mixing until well combined.
Step 3: Stir in the cake mix and sprinkles until a soft dough forms.
Step 4: Chill the dough in the refrigerator for at least 30 minutes to make it easier to roll.
Step 5: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Step 6: Scoop tablespoon-sized portions of dough and roll into balls, then coat thoroughly in powdered sugar.
Step 7: Place on baking sheets and bake for 10-12 minutes until edges are barely golden.
Step 8: Let cool on the sheet for 5 minutes before moving to a wire rack.
Notes
For extra gooey centers, take the cookies out when they still look slightly wet in the middle.
