Easy 15-Minute BBQ Chicken Wraps

Description

Whip up these incredibly easy and tasty chicken wraps in just 15 minutes, perfect for a quick lunch or a satisfying weeknight dinner.


Ingredients

2 cups cooked chicken, shredded
1/2 cup sweetcorn (canned and drained, or frozen and thawed)
1/4 cup red onion, finely chopped
4 oz cream cheese, softened
1/2 cup BBQ sauce
1/2 cup grated mozzarella or cheddar cheese
4 large flour tortillas
1-2 tablespoons sunflower oil (for frying, optional)
Salt and black pepper to taste


Instructions

Step 1: In a large mixing bowl, combine the shredded cooked chicken, sweetcorn, finely chopped red onion, softened cream cheese, and BBQ sauce.
Step 2: Add the grated mozzarella or cheddar cheese. Season the mixture with salt and freshly ground black pepper to taste. Mix everything thoroughly until all ingredients are well combined and the chicken is evenly coated.
Step 3: Lay a large tortilla wrap flat on a clean surface. Spoon a generous portion of the chicken mixture (about 1/4 to 1/3 cup, depending on your tortilla size) onto the center of the wrap.
Step 4: Fold the left and right sides of the tortilla inwards over the filling, then tightly roll the tortilla from the bottom upwards, creating a compact wrap. Repeat with the remaining wraps and filling.
Step 5: You can serve these wraps fresh and unfried, or for an extra delicious twist, fry them. Heat a little sunflower oil in a large skillet or frying pan over medium-low heat.
Step 6: Place the assembled wraps, seam-side down, in the hot pan. Cook for about 4-5 minutes on each side, or until they are golden brown and crispy, and the cheese inside is melted and gooey. Remove from the pan and serve warm.

Notes

Feel free to customize with extra veggies like chopped bell peppers or spinach. These wraps are fantastic for meal prep; simply prepare the filling ahead of time and assemble when ready to eat.
