Description
A rapid, restaurant-quality noodle dish packed with fresh vegetables and a savory umami sauce.
Ingredients
8 oz lo mein noodles or thick spaghetti
1 cup carrots, julienned
1 cup bell peppers, sliced
2 cups baby bok choy
3 cloves garlic, minced
1 tbsp ginger, grated
3 tbsp soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tsp sugar
1 tbsp toasted sesame oil
1 tbsp vegetable oil
Instructions
Step 1: Cook noodles in boiling water for 1-2 minutes less than the package instructions. Drain.
Step 2: Whisk soy sauce, dark soy sauce, oyster sauce, sugar, and sesame oil in a bowl.
Step 3: Heat oil in a wok over high heat and stir-fry carrots and peppers for 2 minutes.
Step 4: Add garlic and ginger, stir-frying for 30 seconds until fragrant.
Step 5: Add cooked noodles, bok choy, and sauce to the wok.
Step 6: Toss everything for 2 minutes until the sauce coats the noodles and the bok choy is wilted.
Step 7: Garnish with green onions and serve immediately.
Notes
Use a high-smoke point oil like canola or peanut oil for the best stir-fry results.
