An easy anasazi beans recipe amazing flavor that brings a hearty, healthy, and heritage-rich meal to your table with minimal effort.
Ingredients
1 lb dried Anasazi beans, rinsed and sorted
1 large onion, diced
4 cloves garlic, minced
6 cups vegetable or chicken broth
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp chili powder
1 tsp salt (adjust to taste)
1/2 tsp black pepper
2 tbsp olive oil
Fresh cilantro and lime wedges for garnish
Instructions
Step 1: Sort and rinse the Anasazi beans to remove any small stones or debris. Optionally, soak the beans for 2 hours in cold water to reduce cooking time, then drain.
Step 2: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook for 5 minutes until soft. Stir in the minced garlic and cook for another minute until fragrant.
Step 3: Add the smoked paprika, cumin, and chili powder to the pot. Stir constantly for 30 seconds to bloom the spices and enhance the easy anasazi beans recipe amazing flavor.
Step 4: Pour in the rinsed beans and the 6 cups of broth. Bring the mixture to a boil.
Step 5: Reduce the heat to low, cover the pot with a lid slightly ajar, and simmer for 1.5 to 2 hours, or until the beans are tender but still hold their shape.
Step 6: Stir in the salt and black pepper once the beans are soft. Taste and adjust seasoning as needed.
Step 7: Serve hot in bowls garnished with fresh cilantro and a squeeze of lime juice for the perfect finish.
Notes
If the liquid reduces too much before the beans are tender, add 1/2 cup of warm water or broth at a time. Do not add salt until the very end to ensure the beans soften properly.
