1 lb dried Anasazi beans, rinsed and sorted
1 large onion, diced
4 cloves garlic, minced
6 cups vegetable or chicken broth
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp chili powder
1 tsp salt (adjust to taste)
1/2 tsp black pepper
2 tbsp olive oil
Fresh cilantro and lime wedges for garnish


Instructions

Step 1: Sort and rinse the Anasazi beans to remove any small stones or debris. Optionally, soak the beans for 2 hours in cold water to reduce cooking time, then drain.
Step 2: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook for 5 minutes until soft. Stir in the minced garlic and cook for another minute until fragrant.
