Description

A wonderfully moist and spiced homemade apple cake, simple to bake and perfect for a cozy treat or any gathering.


Ingredients

1/2 cup (113g) unsalted butter, softened
1 1/2 cups (300g) granulated sugar
2 large eggs
1 tsp vanilla extract
2 cups (240g) all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup (120ml) buttermilk (or milk with 1/2 tbsp lemon juice)
3 medium apples (about 3 cups diced), peeled, cored, and diced (e.g., Gala, Fuji, Honeycrisp)


Instructions

Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round springform pan or a 9x13 inch baking dish.
Step 2: In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
Step 3: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
Step 4: In a separate medium bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, and ground nutmeg until well combined.
Step 5: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined and no streaks of flour remain. Be careful not to overmix.
Step 6: Gently fold the diced apples into the cake batter until they are evenly distributed.
Step 7: Pour the batter into your prepared pan and spread it evenly with a spatula.
Step 8: Bake for 45-55 minutes, or until a wooden skewer or toothpick inserted into the center of the cake comes out clean.
Step 9: Let the cake cool in the pan on a wire rack for 10 minutes. Then, carefully invert it onto the rack to cool completely before slicing and serving.

Notes

For extra flavor and texture, sprinkle a simple streusel topping over the batter before baking. Combine 1/2 cup all-purpose flour, 1/4 cup granulated sugar, 1/4 cup packed brown sugar, 1/4 teaspoon ground cinnamon, and 1/4 cup cold unsalted butter (cut into small pieces). Mix with your fingertips until crumbly and sprinkle evenly over the cake batter.
