Description

Tender chicken breasts stuffed with a creamy, zesty ranch and mozzarella filling, then wrapped in crispy bacon and baked to golden perfection.


Ingredients

4 boneless, skinless chicken breasts
8 oz cream cheese, softened
1 packet (1 oz) ranch seasoning mix
1 cup shredded mozzarella cheese
8-10 slices bacon, cooked and crumbled (for filling)
8-10 slices raw bacon (for wrapping)
Salt and black pepper to taste
Toothpicks (optional)


Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
Step 2: Pound each chicken breast between two pieces of plastic wrap until it's about 1/4 to 1/2 inch thick. Season lightly with salt and pepper.
Step 3: In a medium bowl, combine the softened cream cheese, ranch seasoning mix, 1 cup of shredded mozzarella, and the cooked, crumbled bacon. Mix until well combined.
Step 4: Spoon an equal amount of the cream cheese mixture onto the center of each pounded chicken breast.
Step 5: Carefully roll up each chicken breast, tucking in the sides as you go, to fully enclose the filling.
Step 6: Take 2-3 slices of raw bacon and tightly wrap them around each stuffed chicken roll. Secure with a toothpick if necessary (remember to remove before serving!).
Step 7: Place the wrapped chicken bombs seam-side down in the prepared baking dish.
Step 8: Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C), and the bacon is crispy.
Step 9: Let rest for 5 minutes before serving. Enjoy your explosive flavor!

Notes

Ensure chicken is pounded thin for even cooking. For extra crispy bacon, broil for the last 1-2 minutes, watching carefully. You can prepare these up to 24 hours in advance and refrigerate before baking.
