Ingredients
4 large ripe tomatoes, cored and chopped
1/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
2 cloves garlic, minced
1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)
1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
1/2 teaspoon red pepper flakes (optional)
Instructions
Step 1: Core and chop the ripe tomatoes into bite-sized pieces. Place them into a medium-sized bowl.
Step 2: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, sea salt, freshly ground black pepper, and minced garlic.
Step 3: Pour the dressing over the chopped tomatoes. Add the fresh chopped basil, fresh chopped parsley, and red pepper flakes (if using).
Step 4: Gently toss all ingredients together until the tomatoes are evenly coated.
Step 5: Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours, allowing the flavors to meld and the tomatoes to marinate.
Step 6: Stir well before serving. Enjoy as a side dish, topping, or in your favorite summer salad.
