Description

A bakery-style pastry featuring flaky puff pastry, a zesty lime cream cheese filling, and fresh summer berries.


Ingredients

1 box puff pastry dough (2 sheets), thawed
1 8-ounce block cream cheese
1 tablespoon sour cream
3 tablespoons granulated sugar
2 teaspoons lime juice, freshly squeezed or bottled
Lime zest from one whole lime
2-1/2 teaspoons Mexican vanilla (or vanilla extract)
1/2 cup fresh blueberries, rinsed and dried
1/2 cup fresh strawberries, stems removed and cut in half
3 tablespoons melted butter, for brushing
2 tablespoons sanding sugar
Additional lime zest for garnish


Instructions

Step 1: Preheat your oven to 400°F (200°C) and line two large baking sheets with parchment paper.
Step 2: In a medium bowl, cream together the softened cream cheese, sour cream, sugar, lime juice, lime zest, and vanilla until perfectly smooth.
Step 3: Unfold the puff pastry sheets and cut each into 4 equal squares. Place them on the prepared baking sheets.
Step 4: Score a border 1/2 inch from the edge of each square and prick the center area with a fork.
Step 5: Spoon the cream cheese mixture into the center of each square, spreading it out to the scored border.
Step 6: Top the cream cheese with fresh blueberries and strawberry halves.
Step 7: Brush the edges of the pastry with melted butter and sprinkle with sanding sugar. Bake for 18-20 minutes until golden and puffed.

Notes

Ensure the puff pastry is cold but pliable for the best rise. Sanding sugar adds a professional crunch to the crust.
