Description
A classic, foolproof easy black raspberry pie recipe featuring a flaky buttery crust and a perfectly thickened, sweet-tart berry filling.
Ingredients
2 prepared 9-inch pie crusts (homemade or store-bought)
4 cups fresh or frozen black raspberries
3/4 cup granulated sugar
1/4 cup cornstarch
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1 tablespoon unsalted butter, cut into small pieces
1 egg (for egg wash)
1 tablespoon coarse sugar (for topping)
Instructions
Step 1: Preheat your oven to 400°F (200°C) and place a baking sheet on the bottom rack to catch any drips.
Step 2: In a large mixing bowl, gently toss the black raspberries with granulated sugar, cornstarch, lemon juice, and vanilla extract until the berries are evenly coated for your easy black raspberry pie recipe.
Step 3: Roll out one pie crust and fit it into a 9-inch pie plate, trimming any excess overhanging dough.
Step 4: Pour the berry mixture into the prepared bottom crust and dot the top of the filling with the small pieces of butter.
Step 5: Place the second pie crust over the top. You can create a full crust with vents or a lattice top for your easy black raspberry pie recipe.
Step 6: Crimp the edges of the crust to seal. Brush the top with a beaten egg and sprinkle with coarse sugar.
Step 7: Bake for 45 to 55 minutes, or until the crust is golden brown and the berry filling is bubbling through the vents.
Step 8: Remove from the oven and allow the easy black raspberry pie recipe to cool on a wire rack for at least 3 hours before serving.
Notes
If using frozen berries, do not thaw them before mixing. You may need to add 5-10 minutes to the baking time.
