Ingredients
1 French baguette, sliced
2 cups cherry tomatoes, diced
2 tbsp olive oil
1/4 cup fresh basil, chopped
1 cup cheddar cheese, cubed
1 cup brie cheese, sliced
1/2 cup grapes
Instructions
Step 1: Slice the French baguette into 1/2-inch thick pieces. Arrange them on a baking sheet or toaster rack.
Step 2: Toast the baguette slices in a preheated oven at 375°F (190°C) for 5-7 minutes, or until lightly golden and crisp. Alternatively, use a toaster or grill pan. Let cool slightly.
Step 3: While the baguette toasts, prepare the bruschetta topping. In a medium bowl, combine the diced cherry tomatoes, 2 tablespoons of olive oil, and the fresh chopped basil. Stir gently to combine.
Step 4: To assemble the bruschetta, spoon a generous amount of the tomato mixture onto each toasted baguette slice just before serving.
Step 5: For the cheese platter, arrange the cubed cheddar cheese and sliced brie cheese on a serving board or platter.
Step 6: Add the 1/2 cup of grapes to the platter, clustering them around the cheese. Add any optional accompaniments like crackers, nuts, or olives for variety.
