Description
This incredibly easy recipe combines yellow cake mix and apple pie filling to create a wonderfully moist, flavorful quick bread that tastes like a cozy slice of autumn.
Ingredients
1 can (20-21 oz) apple pie filling, mashed
1 box (15.25 oz) yellow cake mix
4 large eggs, slightly beaten
1 cup self-rising flour
1 Tbsp ground cinnamon
1 medium apple, chopped
Instructions
Step 1: Preheat your oven to 325°F (160°C). Grease two standard loaf pans.
Step 2: In a large bowl, whisk together the yellow cake mix, self-rising flour, and ground cinnamon until well combined.
Step 3: Add the slightly beaten eggs and the mashed apple pie filling to the dry ingredients. Mix until just combined, being careful not to overmix.
Step 4: Gently fold in the chopped fresh apple.
Step 5: Divide the batter evenly between the two greased loaf pans.
Step 6: In a small bowl, combine 1 tablespoon of sugar and 1/2 teaspoon of cinnamon. Sprinkle this mixture evenly over the top of each loaf.
Step 7: Bake for 35 to 45 minutes, or until a wooden skewer inserted into the center of the loaves comes out clean. The top should be golden brown.
Step 8: Let the loaves cool in the pans for 10-15 minutes before transferring them to a wire rack to cool completely.
Notes
For an extra touch, drizzle a simple glaze made from powdered sugar and milk over the cooled bread. You can also add 1/2 cup of chopped walnuts or pecans to the batter for added texture.
