A delightful no-bake dessert featuring layers of crunchy vanilla wafer crust, creamy caramel mousse, and tender spiced apples, perfect for fall.
Ingredients
1 ½ cups vanilla wafer crumbs (about 10-12 oz package)
½ cup unsalted butter, melted
3 medium apples (Granny Smith, Honeycrisp, or Fuji recommended), peeled, cored, and diced
1 tablespoon granulated sugar
½ teaspoon ground cinnamon
2 tablespoons water
8 ounces cream cheese, softened
½ cup powdered sugar
1 teaspoon vanilla extract
¼ teaspoon salt
1 ½ cups cold heavy cream
¾ cup good quality caramel sauce, plus more for drizzling
Instructions
Step 1: Prepare the Crust. In a medium bowl, combine the vanilla wafer crumbs and melted butter until well mixed. Divide the mixture evenly among 6-8 dessert cups and press firmly into the bottom to form the crust. Place in the refrigerator to chill while you prepare the other components.
Step 2: Cook the Spiced Apples. Peel, core, and dice the apples into small, uniform pieces. In a small saucepan over medium heat, combine the diced apples, granulated sugar, cinnamon, and water. Cook for 5-7 minutes, stirring occasionally, until the apples are tender-crisp. Remove from heat and let cool completely.
Step 3: Make the Caramel Mousse. In a large mixing bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and salt with an electric mixer until smooth and creamy.
Step 4: In a separate clean bowl, whip the cold heavy cream until stiff peaks form.
Step 5: Gently fold ¾ cup of the caramel sauce into the cream cheese mixture until just combined. Then, carefully fold in the whipped cream in two additions, taking care not to deflate the mixture, until light and airy.
Step 6: Assemble the Dessert Cups. Spoon or pipe about half of the caramel mousse over the chilled crust in each cup. Top with a layer of cooled spiced apples. Repeat with the remaining mousse and apples.
Step 7: Chill and Serve. Cover the dessert cups and refrigerate for at least 2 hours, or preferably overnight, to allow them to set and flavors to meld. Before serving, garnish with an extra dollop of whipped cream (optional) and a generous drizzle of caramel sauce.
Notes
For an extra touch, toast some chopped pecans and sprinkle them between the apple and mousse layers for added crunch and nutty flavor.
