Description
A giant, chewy chocolate chip cookie baked into a pizza, topped with luscious caramel sauce, melted chocolate chips, and a sprinkle of flaky sea salt.
Ingredients
1 cup (2 sticks) unsalted butter, softened
¾ cup granulated sugar
¾ cup packed light brown sugar
2 large eggs
2 tsp pure vanilla extract
3 cups all-purpose flour
1 tsp baking powder
½ tsp salt
1 cup semi-sweet chocolate chips (plus extra for garnish)
½ cup caramel sauce (store-bought or homemade), warmed slightly
Flaky sea salt (optional, for finishing)
Instructions
Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 12-inch pizza pan or line it with parchment paper.
Step 2: In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar with an electric mixer until light and fluffy.
Step 3: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Step 4: In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Step 6: Press the cookie dough evenly onto the prepared pizza pan, forming a large circle that reaches the edges of the pan.
Step 7: Bake for 20-25 minutes, or until the edges are golden brown and the center is set but still looks slightly soft. The cookie will firm up as it cools.
Step 8: Immediately after removing from the oven, sprinkle the 1 cup of semi-sweet chocolate chips evenly over the hot cookie crust. Let them sit for 2-3 minutes to melt.
Step 9: Once melted, gently spread the chocolate over the cookie crust using the back of a spoon or an offset spatula. Drizzle the warmed caramel sauce evenly over the melted chocolate.
Step 10: If desired, sprinkle with extra chocolate chips and flaky sea salt. Allow the cookie pizza to cool for at least 15-20 minutes before slicing and serving. Enjoy!
Notes
For an extra indulgent treat, serve slices of warm cookie pizza with a scoop of vanilla ice cream. This cookie pizza can also be prepared ahead of time and stored at room temperature for up to 3 days in an airtight container.
