A comforting, family-friendly casserole featuring seasoned ground beef, tender potatoes, and a creamy, cheesy sauce, perfect for a hearty weeknight dinner.
Ingredients
3 lbs lean ground beef, browned & drained
1 large onion, diced
1 can (10.5 oz) fat-free cream of chicken soup
1 can (10.5 oz) fat-free cream of mushroom soup
Salt and pepper, to taste
4 cans (15 oz each) sliced potatoes, drained
2 cups shredded cheddar cheese
Instructions
Step 1: Preheat your oven to 375°F (190°C). In a large skillet, brown the lean ground beef over medium heat until no pink remains. Drain any excess fat thoroughly.
Step 2: Add the diced onion to the same skillet with the browned beef. Cook until the onion is softened and translucent, about 5-7 minutes.
Step 3: Stir in both cans of fat-free cream of chicken soup and fat-free cream of mushroom soup. Season generously with salt and pepper to taste, mixing until well combined.
Step 4: In a 9x13 inch baking dish, spread half of the drained sliced potatoes evenly across the bottom. Top with half of the beef mixture, then sprinkle with 1 cup of shredded cheddar cheese.
Step 5: Repeat the layers with the remaining potatoes, beef mixture, and the final 1 cup of shredded cheddar cheese.
Step 6: Bake for 30-35 minutes, or until the casserole is bubbly and the cheese is melted and golden brown. Let stand for 5 minutes before serving.
Notes
For a bit of spice, add a pinch of red pepper flakes to the beef mixture. You can also mix in some frozen vegetables like peas or corn during Step 3 for added nutrition and color. Freshly grated cheese will melt smoother than pre-shredded.
