Description
These crispy, tender, and incredibly flavorful oven-roasted potatoes are coated in ranch seasoning and topped with two kinds of melted cheese, making them the ultimate easy side dish.
Ingredients
2 lbs baby potatoes or small Yukon Gold potatoes, quartered or halved if large
2 tablespoons olive oil
1 (1 oz) packet ranch seasoning mix
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish, optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: Wash the potatoes thoroughly and pat them completely dry with a clean kitchen towel or paper towels. This is crucial for crispiness!
Step 3: In a large bowl, combine the dried potato pieces with olive oil, ranch seasoning mix, garlic powder, and onion powder. Toss well to ensure all potatoes are evenly coated.
Step 4: Spread the seasoned potatoes in a single layer on the prepared baking sheet. Ensure there's plenty of space between each piece to prevent steaming. If necessary, use two baking sheets.
Step 5: Roast for 15 minutes, then carefully remove the baking sheet from the oven and flip the potatoes. Return to the oven and roast for another 10-15 minutes, or until potatoes are fork-tender and starting to crisp.
Step 6: Sprinkle the shredded cheddar cheese and grated Parmesan cheese evenly over the potatoes. Return to the oven for 3-5 minutes, or until the cheese is melted and bubbly.
Step 7: Remove from the oven, garnish with fresh parsley if desired, and serve immediately. Enjoy your new favorite side dish!
Notes
For an extra kick, add a pinch of cayenne pepper with the seasonings. Feel free to experiment with different cheese blends, such as Monterey Jack or a Colby-Jack mix. These potatoes are also excellent with a sprinkle of cooked bacon bits added with the cheese!
