Description

A deliciously simple and comforting casserole featuring tender chicken, crispy bacon, creamy ranch sauce, and gooey melted cheese, perfect for a busy weeknight.


Ingredients

1 pound cooked chicken, shredded or diced
8 slices bacon, cooked crispy and crumbled (reserve 1 tbsp for garnish, optional)
1 (8 ounce) block cream cheese, softened
1/2 cup milk (or chicken broth)
1 (1 ounce) packet ranch seasoning mix (or 1/2 cup bottled ranch dressing)
1 teaspoon garlic powder
1/2 teaspoon black pepper
12 ounces pasta (such as penne or rotini), cooked al dente and drained
2 cups shredded Colby Jack or cheddar cheese, divided
Fresh chives or parsley, chopped, for garnish (optional)


Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
Step 2: In a large mixing bowl, combine the softened cream cheese, milk (or chicken broth), ranch seasoning mix (or bottled ranch dressing), garlic powder, and black pepper. Whisk until smooth and creamy.
Step 3: Add the cooked, shredded chicken, crumbled bacon (reserving a tablespoon for garnish if desired), and cooked pasta to the cream cheese mixture. Stir gently until everything is well combined and coated in the sauce.
Step 4: Pour the mixture into the prepared baking dish and spread evenly. Sprinkle 1 1/2 cups of the shredded Colby Jack or cheddar cheese over the top.
Step 5: Bake for 20-25 minutes, or until the casserole is bubbly around the edges and the cheese is melted and lightly golden.
Step 6: Remove from oven, let stand for 5 minutes before serving. Garnish with reserved bacon crumbles and fresh chives or parsley, if desired.

Notes

For a richer flavor, use full-fat cream cheese. For a spicier kick, add a pinch of red pepper flakes to the sauce.
