Description
A comforting and creamy casserole made with the classic 'San Francisco Treat,' tender chicken, and fresh broccoli.
Ingredients
2 boxes (6.9 oz each) Chicken Flavor Rice-A-Roni
4 tablespoons butter
4 cups water (or chicken broth)
3 cups cooked chicken, shredded or cubed
1 can (10.5 oz) condensed cream of chicken soup
1/2 cup sour cream
2 cups fresh broccoli florets, lightly steamed
2 cups shredded sharp cheddar cheese
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions
Step 1: In a large skillet, melt the butter over medium heat. Add the rice and vermicelli mixture from the Rice-A-Roni boxes and sauté until the pasta is golden brown.
Step 2: Stir in the water (or broth) and the seasoning packets. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes or until rice is tender.
Step 3: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
Step 4: In a large bowl, combine the cooked rice, shredded chicken, cream of chicken soup, sour cream, steamed broccoli, garlic powder, and 1 cup of the shredded cheese.
Step 5: Spread the mixture evenly into the prepared baking dish. Top with the remaining 1 cup of cheddar cheese.
Step 6: Bake for 20-25 minutes until the casserole is heated through and the cheese is melted and bubbly.
Notes
You can use rotisserie chicken for a faster prep time. If the rice seems too dry before baking, add 1/4 cup of milk to the mixture.
