Ingredients
3 cups cooked chicken, diced (rotisserie or poached breast)
1/2 cup high-quality mayonnaise
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
2 tablespoons fresh dill, chopped
1 tablespoon fresh parsley, chopped
1/2 teaspoon garlic powder
Salt and black pepper to taste
Optional: 1/4 cup sliced scallions or red grapes
Instructions
Step 1: Place the diced, cooled chicken into a large mixing bowl and season lightly with salt and pepper.
Step 2: In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, and garlic powder until smooth.
Step 3: Pour the dressing over the chicken and add the fresh dill and parsley.
Step 4: Use a spatula to gently fold the ingredients together until the chicken is evenly coated in the creamy dressing.
Step 5: Taste and add more salt, pepper, or lemon juice if desired. Chill in the refrigerator for at least 30 minutes before serving for the best flavor.
