Ingredients
12 oz pre-cooked chicken sausage, sliced
1 lb baby potatoes, halved
1 bell pepper, chopped
1 medium zucchini, sliced
1 cup broccoli florets
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
1/2 tsp smoked paprika
Salt and pepper to taste
Instructions
Step 1: Preheat oven to 400°F (200°C).
Step 2: Chop all vegetables and slice the chicken sausage into uniform pieces.
Step 3: In a large bowl, toss the sausage and veggies with olive oil and all spices.
Step 4: Spread the mixture in a single layer on a large rimmed baking sheet.
Step 5: Roast for 25-30 minutes, tossing halfway through, until potatoes are tender.
Step 6: Garnish with fresh herbs and serve hot.
Notes
Ensure vegetables are cut to similar sizes for even cooking. For crispier potatoes, start them 10 minutes earlier.
