These quick and easy Cinnamon Sugar Biscuit Bites with a simple vanilla icing are a delightful treat perfect for breakfast, snacks, or dessert.
Ingredients
1 can (16.3 oz) refrigerated biscuit dough (8 large biscuits)
1/2 cup granulated sugar
2 teaspoons ground cinnamon
1/4 cup (1/2 stick) unsalted butter, melted
1 cup powdered sugar
2-3 tablespoons milk or heavy cream
1/2 teaspoon vanilla extract
Instructions
Step 1: Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
Step 2: Open the can of refrigerated biscuits. Using a knife or kitchen shears, cut each biscuit into 4 equal pieces.
Step 3: In a small bowl, combine the granulated sugar and ground cinnamon. Stir well to mix.
Step 4: Place the melted butter in a separate shallow bowl. Dip each biscuit piece into the melted butter, ensuring it's fully coated. Let any excess butter drip off.
Step 5: Immediately transfer the butter-coated biscuit piece to the cinnamon sugar mixture. Roll it around until evenly coated on all sides.
Step 6: Arrange the coated biscuit pieces on the prepared baking sheet, leaving a little space between each one.
Step 7: Bake for 12-15 minutes, or until the biscuit bites are golden brown and cooked through. The exact time may vary by oven.
Step 8: While the biscuit bites are baking, prepare the icing. In a medium bowl, whisk together the powdered sugar, 2 tablespoons of milk/cream, and vanilla extract until smooth. If the icing is too thick, add the remaining tablespoon of milk/cream, a little at a time, until you reach a drizzly consistency.
Step 9: Once the biscuit bites are out of the oven, let them cool on the baking sheet for 5 minutes. Drizzle the prepared icing generously over the warm cinnamon sugar biscuit bites.
