Easy Coconut Lime Bars

Description

A delightful 5-ingredient tropical dessert featuring a buttery graham cracker crust and a zesty, creamy coconut-lime filling, perfect for any occasion.

1 1/2 cups graham cracker crumbs
1/2 cup (1 stick) unsalted butter, melted
2 large eggs
1 (14-ounce) can sweetened condensed milk
1/2 cup fresh lime juice (from about 3-4 limes)
1 cup shredded coconut flakes
1 teaspoon vanilla extract


Instructions

Step 1: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
Step 2: In a medium bowl, combine the graham cracker crumbs and melted butter until well mixed. Press the mixture evenly into the bottom of the prepared baking pan.
Step 3: Bake the crust for 8-10 minutes, or until lightly golden. Remove from oven and let cool slightly while you prepare the filling.
Step 4: In another medium bowl, whisk together the eggs, sweetened condensed milk, fresh lime juice, shredded coconut flakes, and vanilla extract until smooth and well combined.
Step 5: Pour the lime-coconut filling evenly over the warm, pre-baked crust.
Step 6: Return the pan to the oven and bake for 15-20 minutes, or until the edges are set and the center has only a slight jiggle. Do not overbake.
Step 7: Let the bars cool completely in the pan on a wire rack at room temperature. Once cooled, transfer the pan to the refrigerator and chill for at least 2-3 hours, or preferably overnight, to allow the bars to fully set.
Step 8: Once thoroughly chilled, use the parchment paper overhang to lift the bars out of the pan. Slice into 9 or 12 squares using a sharp knife, wiping the blade between cuts for clean edges. Serve cold and enjoy!

Notes

For an extra zing, add 1-2 teaspoons of lime zest to the filling mixture. Ensure bars are completely chilled for best slicing and flavor. Wipe knife with a warm, damp cloth for clean cuts.
