A delightful and easy-to-make appetizer featuring creamy goat cheese, tart cranberries, and fresh thyme on a crispy flatbread crust.
Ingredients
1 pre-made flatbread crust (naan, pita, or thin pizza crust)
4 oz (113g) goat cheese (chèvre), softened
1/2 cup fresh cranberries, whole or roughly chopped
1 tbsp fresh thyme leaves, chopped
1 tbsp olive oil
Optional: 1/4 cup chopped pecans or walnuts
Optional: Drizzle of honey or balsamic glaze
Instructions
Step 1: Preheat your oven to 400°F (200°C). If using a flatbread that benefits from pre-baking, place it on a baking sheet and bake for 3-5 minutes until lightly golden. Skip this if your crust is already firm.
Step 2: Evenly spread the softened goat cheese over the pre-baked (or raw, if not pre-baking) flatbread crust, leaving a small border around the edges.
Step 3: Scatter the fresh cranberries and chopped fresh thyme leaves over the goat cheese.
Step 4: Drizzle the entire flatbread lightly with olive oil.
Step 5: Place the flatbread on the baking sheet and bake for 10-12 minutes, or until the crust is golden brown and crispy, and the goat cheese is warm and slightly bubbly. The cranberries should just begin to burst.
Step 6: If desired, sprinkle with chopped pecans or walnuts immediately after removing from the oven. For an extra touch, drizzle with honey or balsamic glaze.
Step 7: Slice the flatbread into squares or wedges and serve warm for the best flavor and texture. Enjoy your easy and delicious appetizer!
Notes
For an even crispier crust, ensure your oven is fully preheated and consider pre-baking the plain crust for a few minutes before adding toppings. If fresh cranberries are out of season, slightly sweetened dried cranberries can be used, though they won't provide the same tart burst.
