1 pre-made flatbread crust (naan, pita, or thin pizza crust)
4 oz (113g) goat cheese (chèvre), softened
1/2 cup fresh cranberries, whole or roughly chopped
1 tbsp fresh thyme leaves, chopped
1 tbsp olive oil
Optional: 1/4 cup chopped pecans or walnuts
Optional: Drizzle of honey or balsamic glaze


Instructions

Step 1: Preheat your oven to 400°F (200°C). If using a flatbread that benefits from pre-baking, place it on a baking sheet and bake for 3-5 minutes until lightly golden. Skip this if your crust is already firm.
Step 2: Evenly spread the softened goat cheese over the pre-baked (or raw, if not pre-baking) flatbread crust, leaving a small border around the edges.
Step 3: Scatter the fresh cranberries and chopped fresh thyme leaves over the goat cheese.
Step 4: Drizzle the entire flatbread lightly with olive oil.
Step 5: Place the flatbread on the baking sheet and bake for 10-12 minutes, or until the crust is golden brown and crispy, and the goat cheese is warm and slightly bubbly. The cranberries should just begin to burst.
Step 6: If desired, sprinkle with chopped pecans or walnuts immediately after removing from the oven. For an extra touch, drizzle with honey or balsamic glaze.

Notes
