Description

1½ tsp chili powder
1½ tsp onion powder
2 tsp garlic powder
¼ tsp cayenne
2 lb chicken tenders
¼ cup butter (divided)
2 cups heavy cream


Instructions

Step 1: In a small bowl, combine salt, chili powder, onion powder, garlic powder, and cayenne pepper. Mix well to create your spice blend.
Step 2: Pat the chicken tenders dry with paper towels. Season the chicken generously on all sides with the prepared spice blend, ensuring an even coating.
Step 3: In a large skillet or Dutch oven, melt half of the butter (2 tablespoons) over medium-high heat. Once the butter is sizzling, add the seasoned chicken tenders in a single layer. Cook for 3-5 minutes per side, or until golden brown and cooked through. You may need to cook the chicken in batches to avoid overcrowding the pan.
Step 4: Remove the cooked chicken from the skillet and set aside on a plate. Reduce the heat to medium-low.
Step 5: Add the remaining butter to the skillet, allowing it to melt. Pour in the heavy cream, stirring constantly. Use a wooden spoon or spatula to scrape up any browned bits (fond) from the bottom of the pan; these bits add incredible flavor to the sauce.
Step 6: Bring the cream mixture to a gentle simmer, stirring occasionally, until it thickens slightly (about 3-5 minutes). Do not boil vigorously.
Step 7: Return the cooked chicken tenders to the skillet, nesting them into the creamy sauce. Simmer for another 2-3 minutes, allowing the chicken to warm through and absorb the flavors of the sauce.
