Description
A lush and velvety tropical pudding made with fresh corn and rich coconut milk.
Ingredients
6 green corn cobs
200 ml of coconut milk
1 tablespoon of melted butter
1/2 cup of sugar
1 pinch of salt
Instructions
Step 1: Remove husks and silk from the 6 corn cobs and cut the kernels off with a sharp knife.
Step 2: Blend the kernels with 200 ml of coconut milk and a pinch of salt until smooth.
Step 3: Pour the blended mixture through a sieve into a saucepan to remove any husks.
Step 4: Add 1/2 cup of sugar and 1 tablespoon of melted butter to the saucepan.
Step 5: Cook over medium heat, stirring constantly for 10-15 minutes until the mixture thickens into a creamy pudding.
Notes
Substitute butter with coconut oil for a completely vegan version.
