Description
Tender, juicy shredded chicken, infused with zesty ranch flavor and creamy cheese, slow-cooked to perfection and piled high on soft sandwich buns.
Ingredients
2 pounds boneless, skinless chicken breasts
1 packet (1 oz) ranch seasoning mix
1 cup chicken broth
1/2 cup cream cheese, softened
1 cup shredded cheddar cheese
6-8 sandwich buns (hamburger buns, brioche, or ciabatta)
Optional toppings: shredded lettuce, sliced tomatoes, pickles, red onion, crispy bacon
Instructions
Step 1: Place the boneless, skinless chicken breasts evenly at the bottom of your slow cooker.
Step 2: Sprinkle the entire packet of ranch seasoning mix over the chicken. Pour the chicken broth over the seasoned chicken.
Step 3: Cover the crock pot and cook on LOW for 6-7 hours, or on HIGH for 3-4 hours, until the chicken is incredibly tender and easily shredded with a fork.
Step 4: Carefully remove the cooked chicken from the crock pot. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker with the remaining liquid.
Step 5: Add the softened cream cheese to the shredded chicken in the pot. Stir well until the cream cheese is fully melted and coats the chicken. Stir in the shredded cheddar cheese until it's melted and thoroughly combined.
Step 6: Spoon a generous amount of the warm, creamy ranch chicken mixture onto your favorite sandwich buns. Garnish with any desired optional toppings and serve immediately.
Notes
For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce along with the ranch seasoning. Adjust cheese to your liking, using Monterey Jack or Pepper Jack for variation.
